Does anybody know, when exporting field information from Salesforce tables via the connector, how to extract any picklist options?

@DebraH If I understand correctly you are looking to retrieve a list of possible values for a drop down list in your SFDC console/interface. If this is the case it is possible to retrieve the values. However, you have to know which object/table in SalesForce contains the values associated with the field you need, and the name of these objects/tables are going to be dependent on your particular environment. If you know the name of this object/table though you should be able to query it just like any other object/table to retrieve the associated information.
For example our test environment has a drop down field called status that presents a number of different values. The table that contains these values is called CaseStatus. I can query this table and get a list of all of the possible values for the field, and additional information on these values including their unique id number, sort order, creation date, if the value is the default or not, etc...
