I was watching a YouTube video by Dr. Stephanie Evergreen while she demonstrated how she created a Dr. Fauci approved chart (in excel). I was motivated to try it in Alteryx and achieved this:

I am attaching the workflow I constructed If you can improve the rendering, I'm interested in seeing how you get there and if there's something closer to the Excel version that she demonstrates.
