Mapping Data to see how many unique characteristics are there

How do I find out which type of characteristic is most prevalent in which type of fruit? I am very lost right now, help

Can you give us the logic behind it.

 

How do to tag a characteristic as most prevalent if there any condition?

 

Can you provide some sample output.
