Interface Element Populating a Formula

Hello! I am working on a workflow where I have multiple periods that can be selected (1-6 for now). These periods are all independent columns in the data set. Then, I use a formula to find the variance of two or more of the periods for analysis. I am wondering if there is a way to: 

1) Prepopulate the interface element (list) from the columns itself without needing to hard code the periods. I want there to be a way for the user to select however many periods to calculate. 

2) Use the formula and calculate only those items that the user has selected?
