Is it possible to save the output "excel sheet" to a specific CloudDrive or SharePoint path?

And how this could be done?

Have you tried the SharePoint Output Tool? SharePoint Output Tool | Alteryx Help

Additionally, you could "sync" the folder to your machine so you can use the regular Output Data tool. There would end up being a path on your computer to reference. Sync SharePoint and Teams files with your computer - Microsoft Support

If we sync Sharepoint folder to local desktop, how will this work if we are planning to publish this solution to Alteryx server?

@monish124 depends on the use case, but speaking high level as long as your Alteryx Server has access to the locations you are referencing you should be good to go!
