How to calculate an average of a data base for previous week

Hi Community,

 

I need your help please. I created a workflow that calculate the average of prices from Monday to Friday of the prior week from today (despite the day of the week I am running the workflow). However, I feel my solution has so many steps and I want to find a way to simplify it. I wonder if any of you knows a formula that can calculate the average in one shot. Attached an example of what I need to get. Thank you so much!
