Find & Replace (not replacing full title)

I have attached my workflow to show what I am trying to do, but when I try to find and replace - the replace is only replacing half of what is in the column and missing the remaining:  

Is there a way to get it so it shows all of what I am trying to replace to make my table format bettter.
