Filtering a dataset by date when the date will always be changing

I have a process that runs every business day and require two days of data to complete. I added a dynamic date filter that factors in weekends as seen in the attached image, but this causes issues on long weekends or mid-week holidays. I have also attached a sample data set that has two different dates in it. Is there a way I can filter the data so I can isolate each day, so I don't need any manual intervention when there is a holiday?
