Derive a new column & extract the date from dynamic column name to return as a row

Hi Community 

I need to extract the date from a column name and want that to end up as a new column for all the rows. Attached is the package with input and desired output. Please see the date is dynamic in nature so would need to be something like variable which acts as a parameter. 

Meaning this week I have 05-09-2021_SALES as the column name and next week it might be 12-09-2021_Sales in the new file. 

Is someone please able to help me solve this? Thanks heaps in advance,
