3 days worth of data

How do I make this query pick up 3 days worth of files if the workflow is ran on a Monday?

If understand your intention correctly.

So you are running the working on 2021-02-22, which is a Monday,

in your Day 1, you use DateTimeToday(), which is a Monday

then Day2 and Day3 you are using a Data Field [Today], which appears not to be a Monday.
