I just downloaded the Alteryx Developer version, but I cannot find the PDF input. This link, https://help.alteryx.com/20212/designer/pdf-input, it is not saying anything else. I thought that it will be available after the installation. Any idea?

In newer versions this has been replaced by image input & the computer vision tools

I think you need to have AI/ML package installed to get this tool.
Alternatively, you can search for some free PDF readers. I really liked this one. I have used it on several occasions and it worked really well:
