I am currently producing an excel spreadsheet with five sheets, and I would like to format these with color and spacing. I've tried the direction on this page:

but my version of excel does not seem to have the 'Define Name' option, nor does Alteryx have the 'Delete Data & Append' Output option. Any idea's?

The delete data and append options comes with .xls as well I believe:
In terms of the names range piece you can see specify a range such as Sheet1$A1:L120 when outputting.
I would highly recommend checking out this article by @AndrewL and this one as well to provide more clarity.
