What is the easiest way to have a map render on a specific excel tab or excel range?

You could use the "Vertical Section Break" in the Layout tool to put the map in a different tab, this if bringing the map in a separate stream. If the Map is being grouped, you have the option of specifying the group name to rename the tab or you can manually enter the name. As for rendering to a specific excel range you could move the map around based on alignment, but it is not possible to specify the excel range
